The recipe that exists because I refused to through away random peppers.

Just kidding.
I'm not taking you on a tour around Grandma's house before giving you the recipe.
Ingredients

Mixed peppers (I used Tabasco peppers, jalapeños, and banana peppers)

Garlic cloves to taste

1 cup white vinegar

1 cup water

1 tablespoon salt
Directions

Slice your peppers.

Peel your garlic.

Pack peppers and garlic into clean/ sterilized jars.

Combine vinegar, water, and salt in a saucepan.

Bring to a boil.

Pour the hot brine over the peppers.

Allow to cool.

Refrigerate.
That's it.
No special skills required.
No fancy equipment.
No 27-step process.
Just peppers, garlic, vinegar, and a refusal to waste food.

Now for the story behind the name.

I had a handful of Tabasco peppers, a couple jalapeños, some banana peppers, and not enough of any one pepper to make a full recipe.
Most normal people would've moved on with their day.
I decided to throw everything into a jar and see what happened.
Thus, Trash Pepper Sauce was born.
No actual scraps/trash is involved. The name comes from using up all the odds and ends that would've otherwise been left sitting in the refrigerator.

Important Note
This is a refrigerator recipe.
It is not a shelf-stable canning recipe and should be stored in the refrigerator.
The good news? It gets better every day. It's best if used within one to three months of putting it in the fridge.
If you can wait a few days before digging in, the peppers soak up the flavor and the garlic gets friendly with everything else in the jar.
What can you put it on?
Mississippi Pot Roast.
Dirty rice.
Roast beef sandwiches.
Beans.
Burgers.
Hot dogs.
Eggs.
Pretty much anything that could use a little extra kick.
The peppers are great, but don't overlook the brine, that's my favorite! That stuff has ended up in more crockpot meals than I can count.

Turns out one of the best recipes I've made started with a pile of leftovers I refused to throw away.
Not bad for something called Trash Pepper Sauce.
